
With the Holidays coming up, it gets very stressful for mom’s like me (mothers of kids with life-threatening food allergies) to decide what treats to bring to the celebrations that your kids can eat without having their lives threatened by food.
Every year it gets more stressful. As they grow up they start to question–mom why can’t I have the same cupcakes as my cousins–or why can’t they eat anything from the Treats table at all. So I came up with a solution that can help us all on these days.
If everyone can have a special treat–or table–on Holidays, why not have a whole table with treats specially made with stuff that our beloved allergic family members can actually eat?
I have read many books and recipes over the years and I have found a loophole; treats that are as delicious, but without those ingredients that are threatening for my kid.
For instance I have twitched the recipe of Chocolate Cupcakes–an all time first choice of treat during holiday season–to a recipe that does not contain eggs, dairy or nuts an are as delicious as the original ones.
Here I am going to give you my recipe so you can try it yourself at home and bring to the festivities–make sure to make a big batch, everyone is going to love them!
First of all, there’s not a lot of science on making this cupcakes; I used a regular box of Devil’s food cake to make these, in the instructions they ask you to put eggs but there are ways to replace them!
For this recipe you’re going to need:
- 1 box of Devil’s food cake or any other chocolate cake box you prefer
- Egg replacement powder (you can find it at any organic food store like Wholefoods) worth 3 whole eggs for this recipe
- 1/3 cup vegetable oil
- 1 cup water
- Chocolate icing or vanilla icing (just make sure there’s no dairy or nuts in it)
Preheat your oven to 350F. In a large bowl, mix all the ingredients (except for the icing) and stir until smooth. Place your cupcake paper liners on your cupcake trail and fill them with your mix.
Leave in the oven for 20 minutes. Once they’re ready, take them out to cool off. While they’re cooling off you can prepare your icing by stirring it in its container until you get a smooth paste. When your cupcakes are cooled off and ready to decorate, pour some of the icing on each of them and then you can add some sprinkles as topping.
The cupcakes come out as smooth and delicious as any other cupcake! And they are allergen-free!
